In the end, Ryan Miller and the boys just couldn’t make it happen.
BUT a silver medal is nothing to balk at and the guys played their hearts out. Canada skated unbelievably and it was a great game. Wish the circumstances could have been different, but that’s the way the cookie crumbles.
And speaking of cookies, I may or may not have incorporated them into my afternoon snack
I’m holding them because I’m trying to show you that they’re small, but they look HUGE in this pic! I swear, they were the two tiniest of the leftovers! I scarfed them down with some Oikos Greek Strawberry yogurt.
Are you guys into Greek yogurt yet? I’m OBSESSED! So good and so filling because of all that protein. I was just reading, however, that you should alternate between Greek yogurt (great source of protein) with regular, low-fat or nonfat yogurt (more calcium). Just figured I’d pass that along! I’m going to start buying both at the store, I think.
Now let’s get onto the good stuff. While the US was being awarded their silver medals, Mr. KD and I were getting ready to dig into something rich, creamy and GOLD: Crock Pot Baked Potato Soup!!
Ohmygodohmygodohmygod!!!!!!!!! THIS WAS SO GOOD! I know I’m going to start saying that a lot on here, but I can’t help but get excited over delicious food and this deserves a YUMTASTIC AWARD. It was OUTSTANDING
Served with a dollop of light sour cream because that’s the best way to enjoy a soup like this! Oh, and a small sprinkle of more cheese for garnish. Obvi!

Well, then, looks like Mr. KD was a fan. Woudn’t you say?!?
As I stated earlier, my last trip to the grocery store was an epic fail and I have very little veggies left around the house. I did, however, peruse my freezer to find some frozen spinach! I know myself so well that I often buy extra frozen veggies just to save for nights like this! I sauteed it up with some olive oil, minced garlic, parmesan cheese, salt and pepper. Apparently, I was really into cheese tonight, huh?

It was a great compliment to my soup!
I also meant to mention in my previous post that I made adjustments to this recipe. They are as follows:
- 2% cheddar cheese
- 2% evaporated milk
- center cut bacon
